Tasting note

Rich in secondary aromas with clear notes of cut grass, artichoke and tomato. There is a certain astringency on the palate that quickly leads to the fruity notes of raw almonds and stone fruits. At the end of the tasting there is a slight spiciness coming from the green olives from the first day of harvest. An oil with a complexity of aromas and unctuous texture special for marinating dishes in which the oil has to be the main ingredient.
